Coconut Quinoa Porridge

Ingredients

  • 1/2 cup Flannerys Own Organic Quinoa, rinsed
  • 1 cup coconut milk
  • 2 TBS Flannerys Own Chia Seeds
  • Optional extras: Coconut yogurt, cinnamon, coconut sugar, almonds, fresh berries, and banana.

Method

  • Add quinoa to a saucepan with ½ cup coconut milk and ½ cup water. Bring to the boil then simmer on a medium heat until liquid had absorbed from the quinoa.
  • Remove from the heat and add remaining coconut milk and chia seeds. Stir well and allow to sit for 3 minutes.
  • Place the quinoa into a bowl and top with your favourite fruit, nuts or coconut yogurt.
