Chia Egg BItes
These are packed with protein thanks to the extra addition of chia seeds!
Perfect for breakfast on the go, a great snack, kids lunches and more.
Ingredients:
- 3 TBS Flannerys Chia Seeds
- 1 cup cooked spinach or your favourite greens
- 4 organic eggs + 4 extra egg whites
- 1 large organic tomato
- 1 spring onion
- 2 TBS fresh parsely
- Flannerys Himalayan Salt and pepper to taste
Method:
- Preheat the oven to 180 degrees
- Whisk the whole eggs and the egg whites together with salt and pepper.
- Then add the remaining ingredients and combine well.
- Prepare a muffin tin and line it with coconut oil to prevent sticking
- Pour the egg mixture into the muffin tin and top with a little extra fresh herbs
- Bake for 30 minutes or until set.
Play around and add your favourite ingredients such as a little feta, mushrooms, bacon and capsicum!
