Black Bean Quinoa Burgers

These patties are great for those spring BBQ’s. Team them with you favourite salads & a dash of vegan mayo – yum!

Ingredients

1 small brown onion, diced

1 small yellow capsicum, diced

1 red chilli, finely chopped

1 cup finely chopped kale

1 1/2 cup black beans

1 tsp Flannerys Own Fine Himalayan Salt

1 tsp ground paprika

1/2 tsp ground cumin

1/2 tsp ground pepper

1/2 cup gluten free breadcrumbs

1/2 cup Flannerys Own Quinoa, cooked

2 TBS Flannerys Own Linseed Meal + 5 TBS water (mixed together)

Coconut oil for cooking

Method

  • 1. In a medium fry pan add the onion, capsicum and chilli with a little coconut oil. Saute until the onions go translucent. Add the kale & saute until soft.

  • 2. Transfer to a bowl with the black beans, salt, paprika, cumin, pepper, breadcrumbs, quinoa and linseed mix.

  • 3. Mash mixture together with a fork and then form into patties.

  • 4. Fry or bake patties until golden.
