Apple Walnut Cake
Make the house smell amazing with warm apple cake!
Ingredients
- 4 Organic Green Apples
- 3/4 cup of Flannerys Walnuts – chopped
- 3/4 cup Flannerys Organic Coconut Flour
- 6 Organic Eggs
- 2 tsp Organic Vanilla
- 1/3 cup Organic Coconut Milk
- 1 TBS Organic Cinnamon
- 2 TBS Flannerys EVO Organic Coconut Oil, melted
- 1 tsp Nutmeg
- 2 tsp Flannerys Gluten Free Baking Powder
- 1/2 tsp Baking Soda
Method
- Preheat Oven to 200 degrees and prepare a cake tin by lining it with grease-proof paper or melted coconut oil
- Remove the core from three of the apples (you can keep the skin on to include more nutrients if desired), roughly chop and add to a blender/food processor until smooth & pureed.
- Add remaining wet ingredients to the mixer (eggs, milk, vanilla, coconut oil) and process until smooth.
- In a separate bowl, combine dry ingredients (flour, baking soda & powder, cinnamon, nutmeg).
- Next combine wet and dry ingredients together – mixing well into a smooth batter.
- Lastly, add most of the chopped walnuts and the half of the last apple – which we will peel and roughly chop into bite sized pieces/slices. (keep a few walnuts and half of the apple to use to top the cake)
- Pour into cake tin and add walnuts and apple to top
- Bake for roughly 30-40 minutes or until a knife comes out clean
