Warm Mushroom Salad
Salads are great wholesome meals but in winter we crave warmer foods…
That’s why we’ve come up with our Warm Mushroom Salad – it’s the best of both worlds.
Ingredients
- 1/2 cups Flannerys Own Macadamia Halves
- 300g mushrooms of choice
- 1 garlic clove, crushed
- 1 TBS Flannerys Own Organic Olive Oil
- Two large handfuls of baby spinach
- Salt & pepper to season
- 2 TBS fresh lemon juice
- Extra olive oil to dress
- 50g feta, shaved parmesen or nut cheese, optional
Method
- Preheat oven to 180 degrees. Place the macadamias on an oven tray, lightly salt and roast until golden.
- In a large fry pan add the oil, garlic and mushrooms. Stir the mushrooms until they start to brown, then seasons with salt & pepper.
- Add in the baby spinach & stir until it begins to wilt.
- Transfer to a bowl, add fresh lemon juice, a dash of olive oil, roasted macadamias and cheese. Toss and serve.
