Rocky Road – Your Way!

A delicious Christmas (or anytime of the year) treat – homemade Rocky Road!
Start with our chocolate base & add in your favourite Flannerys Own ingredients – yum!

Ingredients (Chocolate)

  • 1 cup Flannerys Own Organic Cacao Powder
  • 1 cup Flannerys Own Organic Cacao Butter
  • 1/2 cup sweetener of choice (we like to use raw organic honey or maple syrup)
  • 1/2 tsp vanilla bean paste

Ingredients (Filling)

  • 1/4 cup Flannerys Own Walnut Halves, roughly chopped
  • 1/4 cup Flannerys Own Dates, roughly chopped
  • 1/4 cup Flannerys Own Almonds, roughly chopped
  • Zest of an orange

Method

  • Add a small amount of water to a saucepan and bring to the boil. Place a heatproof bowl (preferably glass) on top of the water and add in the cacao butter.
  • Stir the cacao butter until completely melted and then sift in the cacao powder.
  • Gently whisk the chocolate mixture until well combined.
  • Slowly add the sweetener as well as vanilla, whisking until combined.
  • Remove from the heat & add in filling ingredients of choice (we like walnuts, dates, almonds & orange zest).
  • Transfer mixture to a lined slice tin and freeze until chocolate has set.
  • Remove from the freezer and slice with a knife dipped in hot water (this will give you a nice clean cut) – enjoy!
