Paleo Zucchini Fritters
Make a batch of our Paleo Zucchini Fritters and store them in the fridge for up to 5 days. They are great for breakfast (we’re thinking with poached eggs and bacon if that is your thing), lunch (with a yummy salad) or dinner (with steamed veg).
Ingredients
- 2 medium zucchinis, finely grated
- 1 small brown onion, finely chopped or grated
- 1 free range organic egg
- 1/2 cup Flannerys Own Almond Meal
- 1/2 tsp Flannerys Own Baking Powder
- 80g goats feta, optional (not Paleo)
- Salt & pepper to season
- Flannerys Own Organic Coconut oil, for frying
Method
- In a large bowl add all ingredients (except the coconut oil) and stir until combined. Season with salt and pepper.
- Add a generous amount of coconut oil to a fry pan over medium heat.
- Add a large spoon full of the mixture to the pan and fry until golden on both sides (be careful when flipping as they are fragile).
- To keep warm while cooking, store in a moderate oven if required.
- Enjoy your Paleo Zucchini Fritters with salad or steamed veg!
