Coconut Chia Jam Slice

This is a new take on an old favourite. Delicious served with herbal tea or organic coffee.

Ingredients

  • 3 cups mixed berries, frozen or fresh
  • 5 tbsp OWN Organic Maple Syrup
  • 2 tbsp OWN Organic Chia Seeds
  • ½ tsp vanilla bean paste
  • 2 cups OWN Organic Rolled Oats
  • 1 cup OWN Almond Meal
  • 4 tbsp OWN Organic EV Coconut Oil
  • 1 cup OWN Organic Desiccated Coconut
  • 1/2 cup OWN Organic Coconut Palm Sugar
  • 2 organic free range eggs

Method

  • To make the jam combine the frozen berries, 3 tablespoons of the maple syrup, chia seeds and vanilla in a small saucepan. Bring the mixture to the boil, then reduce the heat and simmer for 15 minutes or until thick.
  • Transfer the mixture to a bowl and place in the freezer until cool (alternatively you could prepare this the night before and chill in the fridge).
  • Preheat oven to 180 degrees. Combine the remaining maple syrup in a food processor or blender with the almond meal, coconut oil and 1 cup of the oats (the mixture should form bread crumbs; you may need to add some more coconut oil or water to bring the mixture together).
  • Press the mixture into a lined slice tin and bake for 10 – 15 minutes or until golden. Remove from the oven and spread the jam over the warm base.
  • For the coconut topping, whisk the eggs and the coconut sugar together. Stir in the coconut and oats. Spread this mixture over the top of the chia jam. Bake for 20 – 25 minutes or until golden.
