Chia Egg BItes

These are packed with protein thanks to the extra addition of chia seeds!
Perfect for breakfast on the go, a great snack, kids lunches and more.

Ingredients:

  • 3 TBS Flannerys Chia Seeds
  • 1 cup cooked spinach or your favourite greens
  • 4 organic eggs + 4 extra egg whites
  • 1 large organic tomato
  • 1 spring onion
  • 2 TBS fresh parsely
  • Flannerys Himalayan Salt and pepper to taste

Method:

  • Preheat the oven to 180 degrees
  • Whisk the whole eggs and the egg whites together with salt and pepper.
  • Then add the remaining ingredients and combine well.
  • Prepare a muffin tin and line it with coconut oil to prevent sticking
  • Pour the egg mixture into the muffin tin and top with a little extra fresh herbs
  • Bake for 30 minutes or until set.

Play around and add your favourite ingredients such as a little feta, mushrooms, bacon and capsicum!
